Pirates of the Carribbean Feast

     Here’s inspiration for a tropical – and topical – late summer dock party. Entertain your favorite “Pirates” with this treasure chest of Caribbean menu ideas. Ahoy, Mates! The grog is flowing; dinner is served!

Beverages
Your favorite fruity punch, icy cold and garnished with fruit on skewers; Lemonade or soft drinks;
Hurricane Grog (see accompanying recipe).

Buy, Heat & Eat
Here’s a quick and easy menu with easy snacks to buy and try.
• Cream cheese covered with hot pepper jelly with mound of crab on top. Serve with crackers.
• Coconut Shrimp (frozen food section)
• Island Lime Shrimp (frozen food section)
• Jerk Chicken Strips (frozen food section)
• Tropical Fruit Bowl. Provide long bamboo skewers for poking fruit of choice.
• Make-your-own fruit skewers. Include chunks of pineapple, mango, orange, papaya. You may also add cantaloupe, watermelon or honeydew chunks.

For dessert, try...
• Frozen pie (Banana Cream, Coconut Cream or Key Lime)

• Whole Fruit brand sorbet. Put three small scoops (one each of peach, raspberry and lemon) into individual serving bowls.

• Homestead Creamery Ice Cream (banana, peach or orange-pineapple). Pass purchased fudge sauce to which you have added rum extract or coconut extract.

Cook It Up Fresh

Hurricanes to drink, with appetizers of:
• Conch (or Crab) Fritters with Dipping Sauce
• Mango squares wrapped in ham strips, fastened with toothpick
• Skillet Bar-B-Que Shrimp
• Salad of Avocado, Hearts of Palm, and Red Onion with Coriander Vinaigrette
• Jerk Chicken
• Island Style Green Beans
• Tropical Corn Salsa
• Desserts: Spiced Caramel Oranges and Fried Custard Squares with Rum Sauce

Hurricanes
Into a 1-gallon container, pour:
64 oz. chilled Hawaiian Punch (any brand; diet is OK)
12 oz. or so chilled fresh Orange Juice
Juice of two fresh Limes
1 can (12 oz.) chilled Mango Juice
8 oz. or so Pineapple Juice
16 oz. chilled Dark Rum (for a “mild” Category 1 hurricane; you can add
more rum to increase toward Category 4-5)
8 oz. Orange Curacao
4 oz. Triple Sec

Serve over a full glass of ice garnished with stick of pineapple and maraschino cherry.
